  1. Re: Clostridium perfringens in food
Since Chipotle sends bags of pre-processed meat, the bacteria was probably introduced in the processing stream and allowed to grow by heating and storing at too low a temperature.
It is not killed by simple heating since it is a spore former and requires autoclave temperatures to kill the spored (250’C 15lbs pressure, 15 minutes).
While it is passed in the stool and thus dirty hands, it can easily be isolated from the guts of cowish species and of course chickens. Epidemiology traceback should find the source (human or animal), but that is a slow and expensive process.

As a side note, I’m a (retired) public health laboratory director my wife is a current environmental health inspector. I have to eat at Chipotle when she is out of town since she knows explicitly what happens in the back room. I, on the other hand, believe that exposure to various bugs in low quantities can help keep your immune system strong. Those with weak or absent immune systems are, of course, up shit creek.
    you’re welcome
    Bob
